At all times, including while being stored, prepared, displayed, served, or transported, food shall be protected from potential contamination, including dust, insects, rodents, unclean equipment and utensils, unnecessary handling, coughs and sneezes, flooding, drainage, and overhead leakage or overhead drippage from condensation. 750.120 Immediate/Onsite
*41  Observed the sanitizer solution in/at the following location(s) to be too strong: 1. Sanitizer for cups was too strong. 2. Sanitizer bucket for wiping cloths was too strong. Provide for the sanitizer solution to be no stronger than the required concentration. 750.820 Immediate/Onsite
Observed the following food products to be improperly stored. cooked chicken was stored by handsink and at dish washing table. 2. There is no cover on the vegetables at prep table. 3.There is no cover on the pork or egg rolls in the Superior cooler located across from the three compartment sink. Observed food service employees to be handling ready-to-eat foods without minimizing direct hand contact with the food product Food employees shall avoid direct contact with ready-to-eat food whenever possible and, to the extent possible, shall handle ready-to-eat food only with suitable utensils such as a deli tissue, spatulas, tongs, or single-use gloves. Bowl of chicken was located on top of green peppers. 2. Bowl of Beef was located on top of lettuce. Keep all bowls of food inside cooler.
